The plant-based food trend is growing nationwide. Now there’s a new resource for plant-based recipes from the Mexican culinary tradition: La Vida Verde: Plant-Based Mexican Cooking with Authentic Flavor by Jocelyn Ramirez, founder of Todo Verde and co-founder of Across Our Kitchen Tables, an organization focused on uplifting women of color in the food industry.
The book includes 60 recipes, plus many color photographs, of dishes such as Tacos de Yaca Carnitas (Jackfruit Carnitas Tacos), Sopa de Tortilla con Crema (Tortilla Soup with Cream) and Mole Verde con Champiñones (Mushrooms in Green Mole)—all adapted from recipes Ramirez learned from her grandmother.
