“Viva Abejas” — “long live bees” That’s the message Richard Sandoval Restaurants are sending with a special menu featuring bee-centric food and drink now through April 22. The group’s restaurants include dLeña in Washington, D.C., Tamayo in Denver, Toro in Denver and Fort Lauderdale, Toro Toro in Miami and Fort Worth, Maya in New York City, Ciclo in Austin, and La Sandia in Tysons Corner, Virginia.
The menu includes Coconut Ceviche with orange blossom honey, Duck Confit Tacos with pickled vegetables and agave honey, and Honey-Vanilla Cheesecake, and pollinator-inspired drink specials including the Margarita Royale with bee pollen, Garden Spritz with honey caramelized oranges, and The Beekeeper with edible flowers.
“As a restaurant group focused on Latin cuisine, bees are important as they are major pollinators of the agave plant and avocados,” information about the promotion explains. “The Viva Abejas is an initiative with a global reach, and any purchase of a food or drink special from our campaign will drive us towards a better future for all.”
The chef’s desire to help the bees isn’t stopping with the special menu.
“Our goal is to educate 60,000 young learners by the end of 2024 with our initiatives,” information on the website explains.
Those initiatives include classroom packets, learning modules, an educational video, and "Viva Abejas,” a children's book by Sandoval that explores sustainability and the food cycle with the story of a young Ricardo, who meets a Queen Bee in his abuela's backyard. The Queen Bee teaches him about the importance of pollination and conservation. The book is available on Amazon Prime, with 100% of purchases from the book benefitting the World Bee Project's initiatives.
