Makes 4 cups
2 avocados, peeled and diced small
½ mango, peeled and diced small
½ c. diced fresh pineapple, diced small
½ c. papaya, diced small
½ c. tomato, diced small
1 red onion, chopped small
½ red serrano pepper, minced
½ t. minced garlic
¼ t. salt
¼ t. ground cumin
Pinch ground pepper
1 lime
In bowl, combine avocados, mango, pineapple, papaya, tomato, cilantro, onion, Serrano pepper, garlic, salt, cumin, pepper and juice from ½ a lime. Toss gently; rest for at least 30 minutes to allow flavors to blend. Add additional lime juice to taste.
