El Maya, owned by Jimmy Grimaldi, plans on showing customers the large variety of regional Mexican cuisine through an extensive menu that includes dishes such as Molcajete, their signature dish, which contains cactus, cheese, cilantro molcajete sauce and a choice of meat.
