New York City’s oldest Cuban restaurant, Victor's Cafe, is celebrating its 50th birthday with several specials, including new summer dishes such as mixed octopus ceviche with scallops. Sonia Zaldivar (daughter of founder Victor del Corral) has embraced the Nuevo Latino trend, revising many of her father's recipes to make them lighter and healthier. Favorites include the Bartolito (sweet plantains filled with roast Berkshire pork, olives and raisins, served over zesty black bean sauce and goat cheese) and Ropa Vieja (shredded black angus skirt steak simmered in garlic, tomatoes, onions and peppers). Everyone from Barbara Walters, Liza Minelli and Don King have been seen dining there. Pitbull has even deemed Victor's his favorite "PITSTOP" when he comes through New York!
