
A New Jersey-born chef from a Peruvian family is changing the face of Peruvian cuisine in New York City. Erik Ramirez’s Llama Inn (llamainnnyc.com), which recently debuted in Brooklyn's Williamsburg neighborhood, moves beyond pollo to presents a modern take on the fare of his family’s homeland with dishes such deluxe lomo salted served with chive pancakes, pickled chiles and avocado so customers can make their own tacos.
