Chilte, a Mexican restaurant that started as a pop-up in Phoenix, has opened its first brick-and-mortar location in the historic Grand Avenue arts district in the Egyptian Motor Hotel. The hotel was renovated and redesigned with a rock ‘n’ roll theme, offering retro-chic rooms and a bar. Chilte’s menu features both traditional and inventive Mexican cuisine, using diverse ingredients and techniques. The vegan birria tacos are made with jamaica and served in a dry, ordinary flour tortilla. The Pan de Elote Cheesecake is inspired by the Mexican corn cake and features a dense texture with whipped cream and spicy berry compote. Cafe Rio Mexican Grill, known for its Sweet Pork Barbacoa, is opening a new Digital Café location in Vineyard, Utah on April 7, offering easy pick-up, curbside delivery, and drive-thru or in-store kiosk digital ordering through the Cafe Rio App. CEO Steve Vaughan says the Digital Café format allows customers to have flexibility in their ordering experience. The Vineyard location will offer giveaways and specials during its grand opening celebration on April 7, including free exclusive Cafe Rio merchandise for the first 100 customers in line and a $1.99 chips and guacamole deal. Bubbakoo’s Burritos, Lee County, Florida
Bubbakoo’s Burritos, a New Jersey-based fast-casual Mexican fusion restaurant, has opened its first location in Lee County, Florida. The restaurant officially welcomed customers on April 5 after a soft opening. Bubbakoo’s in Estero Town Commons Place is the 105th location nationwide and the second in Southwest Florida. To celebrate the opening, the first 50 customers received free burritos on Wednesday, April 5. Free chips and salsa were offered to the first 50 customers on Thursday, April 6, and a $5 gift card was given to the first 50 on Friday, April 7. Bubbakoo’s co-owner Sean Powers said the chain is expanding quickly, with 25 locations currently under construction, and aims to open 150 by the end of 2023. Powers said the restaurant's unique signature creations set Bubbakoo’s apart from other chains.
