Cencalli Taqueria, Littleton, Colorado
Cencalli Taqueria had grand opening on Dec. 11 in Littleton, Colorado. The restaurant features street tacos and ten different flavors of margaritas. Owners Zoe Romero and her husband Andres Venalonzo say the restaurant is inspired by their hometowns, Mexico City and Guerrero, respectively. “Making sure that we can expose a little bit of our folklore into the city, you know, what we grew up (with) — with food, with ambience, with music,” said Romero in an interview with the Littleton Independent. “It’s been something on our bucket list for a very long time.” Read More
Santo Arcadia, Arcadia, Arizona
James Beard semifinalist Roberto Centeno of Espiritu Mesa and Armando Hernandez, the co-owner of Cocina Chiwas and Tacos Chiwas, are opening a new restaurant in January in Arcadia, Arizona. Santo Arcadia will open in a 7,500-square-foot space with seating for nearly 300. In an article in AZCentral, Hernandez described the concept as casual fine dining, featuring steaks, ceviches and salads. The bar program will include Mexican spirits like Mexican whiskey and bourbon and global wines with a focus on Mexican wines. Ma'Coco, Buda, Texas
Ma'Coco, an Austin-based restaurant that features California-style Mexican cuisine is expanding with a new location south of Austin, Texas in Buda in early 2024. The restaurant website says it “is a representation of the rich Baja and interior Mexican culinary tradition.” The menu includes carne asada, fish tacos, and California burritos. Owner Javier Quihua told MySA they chose Buda as their second location because they wanted to be a part of a growing community.
