The restaurant openings just keep on coming…today, we highlight new spots that recently debuted in Oregon, Washington, and Idaho.
Portland, Oregon
Colibri A menu highlighting the cuisine of the coastal Mexican state of Sinaloa star at this restaurant from Tamale Boy founder Jaime Soltero Jr. that first opened its doors in the city’s Pearl District on March 14 and celebrated with a grand opening on May 2. Current options include Chiloria — a braised shredded pork dish the menu describes as “rooted from the small town of Mocorito, with a history of over 300 years.”
Boise, Idaho
Coa Del Mar Mid-April brought the arrival of this 10,000-sq.-ft. restaurant that offers upscale Latin cuisine, including fresh seafood flown in daily. Chef Enrique Martinez’s menu offers ceviches, carne asada, Baja fish tacos and more, many made with locally produced ingredients from Idaho farms, rivers and ranches. Coa Del Mar is the “sister” of Boise’s Barbacoa (a restaurant that celebrates the influence of The Vaqueros of Spain, the Gaucho of Argentina, the Llanero of the Brazilian Plains, and the Charro of Mexico) and Coa De Jima (a restaurant that delivers traditional Mexican fare in a fine-dining setting).
Seattle
Lupe’s Situ Tacos Launched as a pop-up and delivery business during COVIC, Lupe’s Situ Tacos on Ballard opened in May with an expanded menu of Lebanese-Mexican fusion fare and a vibrant bar. It’s the “home of the original crunchy taco” — made by frying tortillas, then stuffing them, “sewing” them together with toothpicks, pan-frying them to a golden crisp, and adding the customer’s choice of toppings.
Lenox Also opened as a pop-up early in the pandemic, this
soon-to-open offering from chef Jhonny Reyes (planned for an early June debut) is the latest Latin-themed addition to Seattle’s restaurant scene. The menu features Afro-Latin American dishes including shrimp criollo with hand-mashed mofongo and the giant corndogs called alcapurrias to a brick-and-mortar space in the Belltown neighborhood. The opening has been hotly anticipated: Lenox was included on @bonappetitmag list as a Seattle favorite to open this spring.
