The Culinary Institute of American’s campus in San Antonio, Texas, is the site of a three-day boot camp focused on the unique flavors and textures of regional dishes from Puebla and Oaxaca.
From July 1 – 3, attendees will be taken on a culinary journey where they’ll explore the rich history, classic preparation techniques, and indigenous ingredients and flavor profiles of authentic Mexican specialties from these two Mexican states. Each class will be presented by CIA chef-instructors, who will lead technical demos and work closely with the group to prepare multiple recipes.
The Boot Camp will include approximately five hours of hands-on learning each day, plus a final recipe review and a meal produced during your time in the kitchen.
