With fresh, quality Mexican food hard to find in the Glastonburry, Connecticut area, Bill Driggs decided it was time to open a restaurant capable of filling the void. Driggs plans on featuring a Mexican cuisine with Texan and Californian influences. Everything, including lobster and black truffle tacos and a variety of fajitas, is made from scratch in-house. Driggs even hired chef Van Hurd who was a contestant on the TV show “Hell’s Kitchen”. Sayulita is named after a small Mexican fishing village 25 miles north of Puerto Vallarta.
