Disney visitors and locals alike can now savor authentic Mexican fare in three new restaurants from Chef Carlos Gaytán set in Anaheim’s Downtown Disney District at the Disneyland Resort.
The award-winning chef (the first Mexican-born chef to earn a Michelin star) teamed with Patina Restaurant Group on Paseo, Céntrico, and Tiendita, the three concepts that celebrated their Grand Openings on May 2.
At Paseo, guests can savor dishes that range from fresh shrimp ceviche to savory cochinita pibil in a contemporary setting featuring rich woods, custom leathers, lavish greenery, and native accents that celebrate Mexico’s warm climate and culture. Taking inspiration from his hometown of Huitzuco, Mexico, Gaytán has created a concept “where the climate is warm and stylish, and where spice is used unabashedly to gather friends over long meals filled with vibrant Mexican-French flavors,” the website explains.
At Céntrico, the vibe is a more casual with open-air seatng and a menu of “outstanding specialty cocktails and authentic dishes” — think classic margaritas and crispy Baja tacos — allinspired by the chef’s childhood in Mexico.
And at Tiendita, quick-service dining is the order of the day, with options including esquites and tacos al pastor that diners order from self-service kiosks or at the counter.
