It featured panelists Izzy Kharasch, president of Hospitality Works in Chicago; Carlos Rodriguez, owner of La Cazuela in Atlanta; and Tom Darmstadter II, managing partner of Pablo's Mexican Kitchen in Richardson, Texas. Ed Avis, publisher of el Restaurante, moderated the event.
