Makes 6 tacos
1 lb. beets, cooked, peeled, and cut into ½ inch dice
1 chipotle chile in adobo, seeded if desired, and finely chopped
Adobo sauce to taste
½ t. ground cumin
Juice of ½ lime
6 medium tortillas, heated until pliable
Queso fresco for garnish
Chopped cilantro for garnish
In a non-reactive bowl, mix the beets, chipotle, adobo sauce to taste, cumin, and lime juice. Allow to sit for at least 10 minutes. Divide the beet filling among the tortillas and top each taco with crumbled queso fresco and chopped cilantro.
