Makes 3 servings
The Chimichurri
1 T. rosemary
1/2 cup chopped cilantro
1 T. of oregano
1 T. of thyme
1 T. of chili flakes
2 poblano peppers, diced
2 fresh mangos diced
1/2 qt. extra virgin olive oil
Salt as need
In a small bowl mix everything together and add salt as needed.
The Salmon
3 8-oz. salmon filets
Cook salmon in a pan over medium heat with a little bit of extra virgin olive oil and add salt and pepper. Once cooked, top it with the chimichurri and serve with rice and asparagus or over a salad.
