“A dish for the gods” is how New York-based Dominican chef Jay Rodriguez of Ankla Cuisine (anklacuisine.com) describes his "Corazón de Melón”—an “exotic and delicious dish” he created just for Valentine’s Day celebrations. Rodriguez is the creator of his own line of food called "Latino Asian."
1 cup peaches
8 oz. tuna
2 T. chopped basil
2 T. lemon juice amarillo
2 T. extra virgin olive oil
Salt and pepper to taste
Red and black caviar
Virgin olive oil, for garnish
Cut the peach and tuna fish into long strips and then into small pieces and then mix them together with the basil, lemon juice, olive oil, salt and pepper. Shape the mixture into a heart, decorate with the red and black caviar, and drizzle with olive oil to garnish.
