Serves 4
1 c. Don Francisco Fresco Cheese, crumbled
6 c. arugula greens, washed and spun dry
3 c. seedless watermelon, cubed and chilled
1/2 cucumber, sliced into 1/8" rounds
4 oz. balsamic vinaigrette dressing
Salt and black pepper to taste, freshly ground
Combine fresh arugula greens, chilled watermelon cubes, and cucumber rounds in large mixing bowl.
Top with crumbled Don Francisco Fresco Cheese and balsamic vinaigrette dressing, and gently toss.
