Makes 6 servings
The Plantains
12 - 18 BIG BANANA® ripe plantain slices
6 T. butter, softened
6 T. brown sugar
6 t. toasted coconut
18 oz. Haagen-Dazs Dulce de Leche ice cream
6 oz. warmed Caramel Rum Sauce (recipe below)
1½ oz. or 3 T. whipped cream
Powdered sugar, as needed
Sauté plantains with butter and brown sugar, quickly. Spread plantains over center of plate. Scoop ½ cup of ice cream. Top with whipped cream and sprinkle powdered sugar over entire plate. Serve with caramel rum sauce.
The Caramel Rum Sauce
6 fluid oz. caramel or cajeta sauce
½ t. lime juice
1 oz. or 2 T. milk
1 t. rum
Place ingredients in saucepan and heat over low flame, stirring constantly, until hot.
