Makes 1 cocktail
The Cocktail:
1 oz. pox (also known as aguardiente, a Mexican liquor made with corn, wheat and sugar cane)
½ oz. ancho chile liqueur
½ oz. tangerine juice
Chocolate powder, for rimming
½ oz. panela/piloncillo simple syrup (recipe below)
1 pc. Abuelita chocolate, optional, for garnish
The Simple Syrup:
½ lb. piloncillo
1 c. water
Boil ½ lb. piloncillo in 1 cup of water until melted and thickened. To substitute brown sugar for piloncillo, use 1 cup of dark brown sugar and 2 tablespoons molasses.
To serve: Rim cocktail glass with chocolate powder. In a shaker, combine pox, ancho chili liqueur, tangerine juice and piloncillo simple syrup. Strain into glass.
