Elotes Guacamole
Transform a customer favorite by adding these two versions of guacamole to your menu: Elotes Guacamole featuring toasted corn and cotija, and Hot Honey Guacamole spiced with hot honey (a flavor that’s trending on restaurant menus).

Elotes Guacamole
8 ea. Avocados From Mexico
4 T. lime juice
1 t. salt
4 T. white onion, fine chopped
3 t. jalapeños, deseeded, fine chopped
½ c. cilantro, fine chopped
1 c. toasted corn
2 oz. cotija cheese, crumbled
2 fl oz. Mexican crema
1 t. Tajin
Scoop out the pulp from the avocado and place into a large bowl. In a large bowl, gently mash the avocados with lime juice, crema & salt. Gently fold in onions, jalapenos, cilantro and corn. Top with cotija cheese.

Hot Honey Guacamole
Hot Honey Guacamole
8 ea. Avocados From Mexico
4 T. lime juice
1 t. salt
4 T. white onion, fine chopped
1 T. jalapeños, deseeded, fine chopped
1 T. serrano peppers, fine chopped
1 t. habanero peppers, fine chopped
½ c. cilantro, fine chopped
1 fl oz. hot honey
1 T. cotija cheese
Scoop out the pulp from the avocado and place into a large bowl, and mash with lime juice and salt.
Gently fold in onions, jalapenos, serranos, habanero and cilantro. Top with hot honey and cotija cheese.
