Great food and great art go well together! Michelin Star Chef Carlos Gaytán of Chicago’s acclaimed Tzuco restaurant has partnered with the Museum of Contemporary Art (MCA) Chicago to create a signature dish and cocktail to represent Dancing the Revolution: From Dancehall to Reggaetón, the Museum's exhibit that runs through September 20, 2026.
At Tzuco, Gaytan tells his life’s story through an evolving menu of his culinary creations, making him a fitting partner for the MCA Chicago exhibition, which tells the story of Caribbean dance culture and its impact on Latino identity.
“Food and art have always done the same thing: they tell stories, preserve culture, and bring people together,” Gaytan noted in an announcement about the collaboration. “Through the shared pursuit of creativity, we’re so honored to be a part of this conversation. It's a unique opportunity to collaborate with one of Chicago's most important cultural institutions and celebrate Latino creativity in a way that goes beyond our dining rooms.”
The dish Gaytan created is a Lobster Tostada topped with tuna carnitas spread, mayonnaise, avocado mouse, vegetables and potatoes; it is paired with an Old Cuban cocktail featuring Bacardi 8 rum, Ancho Reyes, tamarind-mint syrup, and lime juice. The specials are available on Tzuco’s Back To My Roots Menu through September 20.
UMMO / Loft 22, a contemporary Italian restaurant near Tzuco, also is collaborating with MCA and is featuring a Tamarind Martini as its limited time offering.
Guests who order any of the collaboration items will also receive complimentary two-for-one admission to the exhibition.
