Do you wish you could make fresh tortillas in your restaurant? Now you can learn that skill.
The Tortilla Industry Association and el Restaurante magazine are sponsoring a 3-day, hands-on course to teach the art of in-house tortilla making. The course will take place April 28-30 near San Diego.
"We're very excited to help bring this class to el Restaurante readers," says Publisher Ed Avis. "For decades we've been writing about the role that fresh tortillas plays in every Mexican restaurant, and now our readers have a chance to get their hands right in the dough and learn how to make tortillas -- corn and flour -- in their own restaurants."
Expert Instructors
This course will be taught by Kirk O'Donnell and Bill Zimmerman. Each has over 25 years of experience in the baking industry and with tortillas, with the American Institute of Baking and with tortilla manufacturing companies. They are both 2nd-generation bakers.

For Flour Tortillas
- Flour tortilla ingredient formulation
- Wheat milling and its impact on flour tortillas
- The functions of water, salt, shortening and sugar in flour tortillas
- The application of enzymes, emulsifiers and gums in flour tortillas
- How to specify and use baking powder
- Mixing and temperature control
- Flour tortilla production control
For Corn Tortillas
- The structure and chemistry of corn
- Corn cooking, quenching and steeping technology
- Discussion of masa
- Corn tortilla production
- Frying technology
Each day will include hands-on practice for students so that they leave with the knowledge to start tortilla production in their restaurants. All students who complete the course will be given certificates attesting to their knowledge.
