Roosters Tacos and Tequila, an independent Mexican restaurant in Mobile, Alabama, is seeking franchisees. The restaurant, known for gourmet tacos, burritos, and nachos, was founded in 2017, and saw its profile rocket when it was featured on Food Network’s Diners, Drive-Ins & Dives program.
“From day one, I designed Roosters to be easily replicable,” stated Frankie Little, Roosters founder. “I wasn’t sure if that would be as a chain or with the franchise model. Just two weeks before the first COVID shutdown, we signed an LOI for a second location. When the shutdown hit, we paused progress to reevaluate our path. After reopening, we resumed operations and continued to see year-over-year sales growth.”
Little says Roosters' menu that is easy to execute yet is different from its competitors. Franchisees will gain access to a suite of unique Roosters recipes, including the Caribbean Jerk Chicken Plate — a signature dish served with Spanish rice, black beans, sweet plantains, and a bold habanero BBQ sauce — and the Surf & Turf Burrito, the burrito featured on Diners, Drive-Ins & Dives. This dish includes grilled Gulf shrimp, barbacoa brisket, Spanish rice, guacamole, pico de gallo, and chipotle cream, all topped with queso blanco and chorizo. Established vendor connections, proven processes, and marketing guidance are also a part of each franchise agreement.
Roosters is initially seeking franchise partners within a four-hour drive of its Mobile, Alabama headquarters. This includes key territories along the Gulf Coast, stretching from the lower Panhandle of Florida to Western Louisiana.
“I teach my staff that we are not just in the food service business, we are in the feel-good human experience business. Making someone feel special, and seen, and giving them something a little unexpected is what separates us from the pack,” Little says.
