Thanks to Ulises Ledesma Cruz and Ignacio ‘Jose’ Mendoza Reyes, Longview, WA has a new Mexican restaurant. The two Mexican entrepreneurs have opened Los Jalapeños Taqueria, which serves authentic, fresh Mexican fare including tacos and quesabirria. Reyes and other cooks make beans and prepare meats daily to ensure a high quality product. The owners plan to expand the menu and add to the interior if business stays busy. El Fish Marisqueria is a new Mexican seafood restaurant in New York City opened by the Toloache Restaurant Group, who also own Toloache, Old John's, and more. The head chef, Julian Medina, spent time gathering ideas for the restaurant in Ensenada, in northern Baja California, which is known for its fishing. The menu features dishes like fideos (thin noodles) with lobster, clam chowder, baked clams with chorizo, ceviches, raw bar specialties, swordfish schnitzel, tostadas and tacos, salmon brochettes with poblano peppers, and more. Cocina Chiwas, a new sister restaurant to the popular Tacos Chiwas, has opened in Tempe, Arizona. The restaurant was planned during the pandemic by co-owners Armando Hernandez and Nadia Holguin and is part of Culdesac, the first completely car-free neighborhood in the US. Cocina Chiwas aims to create a tight-knit community through its open and inviting design, handmade plates and bowls by a local ceramic artist, and bicycle parking. Frida's Mexican Cantina, a new restaurant named after Mexican painter Frida Kahlo, is set to open in late March in the former Pizza Hut location on Pineville-Matthews Road in South Charlotte, NC. The restaurant will feature a mural of Frida Kahlo by artist Jorge Torres and is inspired by the flowers, colors, and butterflies in her work. The owner, Roble Zarate, plans to incorporate a playful approach to the food, including a Popsicle cart-style presentation for churros, using supplies from Mexico. Read More
