Los Dos Potrillos Debuts New Restaurant in Castle Rock, Colorado
Los Dos Potrillos — a favorite of Denver Broncos coaches and players through the years — is now one location stronger since opening its newest restaurant at the Promenade at Castle Rock in Castle Rock, Colorado in late January.
The new spot — which took two years to build from the ground up — joins locations in Littleton, Highlands Ranch, Parker, North Glenn, and Centennial (the original location, which Jose Ramirez opened in 2002).
“It’s been a two-year project and we’re just so thankful to have a partnership with the town of Castle Rock, with GH Phipps. Everybody here has poured their heart, sweat, and tears into building this amazing restaurant…thank you everybody,” Co-CEO Daniel Ramirez said before cutting the red ribbon alongside his father Jose and brother and co-CEO Luis to officially open the restaurant.

Burrito Express Adds 7th Arizona Location
Burrito Express, the family-run Mexican restaurant founded in 1995 by Angel Marin Sr., added a seventh location to its roster of Arizona restaurants with the debut of its new Tempe (Kyrene) location. Other locations are in Mesa, Chandler, Gilbert (2 locations), Scottsdale, and Tempe (University).
The new location upholds the tradition of delivering exceptional authentic Mexican cuisine, with a strong focus on community engagement and family values. "We're deeply rooted in the valley, and our growth here reflects our dedication to our community," Angel and Mark Marin, sons of the founder, said in a press statement. "This new outlet is more than just a restaurant; it's a symbol of our over 25 years in the valley and our enduring bond with the people we serve."
To celebrate this milestone, Burrito Express is hosting a special grand opening event at the new Kyrene location. The first 50 customers will receive free burritos for a year, marking a unique opportunity for the community to engage in the festivities and enjoy the flavors of Burrito Express.
