The next few months are shaping up to be busy ones for the Mexican restaurant industry from coast to coast, with the several businesses planning to debut new locations and new concepts.
Del Pez Mexican Gastropub, Wilmington, Delaware
In Delaware, local Wilmington Waterfront favorite Del Pez Mexican Gastropub (recently honored with an OpenTable Diners' Choice Award and named winner of the Best Elevated Tacos in DelawareToday’s Best of Delaware 2023) has two new locations on the drawing board: Del Pez Glen Mills in Concordville, Pennsylvania, which will open in early February, another in Newark, Delaware, coming this spring.
Nuevo Seoul, Detroit
In Detroit, diners will be able to savor fast-casual Korean-Mexican fusion fare (think KBBQ chicken or KBBQ beef tacos and kimchi papas fritas) when Nuevo Seoul opens its doors in early February.
Cantina Pedregal, Folsom, California
In Folsom, California, Cantina Pedregal from Michelin-rated chefs Patricio Wise of Nixtaco and Brad Cecchi of Canon, is on track for a May opening. “We’re striving to create a neighborhood gathering place that has an elevated menu and an exciting bar program,” Wise told abc10. The planned January opening was delayed for the addition of a covered patio that owner Clay Nutting told abc10 “will add significant benefit to the restaurant by providing comfortable outdoor dining year round.”
