Five years ago, Michelin-starred Chef Carolos Gaytán opened Tzuco in Chicago’s Gold Coast neighborhood. The goal: to present the best of Mexican cuisine, infused with French haute cuisine techniques, in a unique and poetic space.
Goal achieved!
On September 16, Gaytán will celebrate the fifth “aniversario” of the restaurant he named for his hometown of Huitzuco in Guerrero, Mexico with a special event. The “Five years, Five Chefs” event will feature a 5-course menu of dishes from diverse regions across México — each telling a story of tradition, innovation, and culinary excellence — prepared by Gaytán and and four guest chefs:
• Oscar Torres: Elevating Animalón in Valle de Guadalupe to Michelin-starred acclaim
• Edgar Chávez: Master of Mexican flavors and sustainability at Rosewood Mayakoba
• Olimpia Calderón: Innovating Sinaloan cuisine at Zanaya, Four Seasons Mexico City
• Carlos López: Blending tradition with innovation at Istmo, Oaxaca
The menu:
- Welcome cocktail: Magia (Los Magos Sotol, lemongrass, egg white)
- Chef Olimpia Calderón: Ceviche Tobalá (wild striped bass, red prickly pear cactus, hoja santa, Tobalá agave)
- Chef Carlos López: Ensalada Istmeña (grilled little gem sesame seed dressing, cured roe fish istmeño aged cheese
- Chef Oscar Torres: Pescado Asado (halibut, curry chileatole, sticky rice tamal bok chov)
- Chef Edgar Chávez: Enchiladas de Carnitas (duck carnitas enchiladas with Grandma's adobo)
- Chef Paola Fernández & Chef Carlos Gaytán: Piñata: (lemongrass foam with roasted-pineapple compote, coconut ice cream, yogurt crumble)
An optional wine pairing of Mexican wines by Monte Xanic also will be available.
