Today is Earth Day. And in celebration, we’re recognizing a Mexican restaurant doing all it can for the environment. The family-owned Tex Mex Connection in North Wales, Pennsylvania, is certified by the Green Restaurant Association and has been since 2009. The restaurant’s menu of fajitas, nachos, and other favorites (including many gluten-free and vegetarian options) and the house margaritas have made the restaurant a draw since its debut in 1984, but it’s what it does to help the environment that makes it so worthy of recognition on Earth Day.
As the restaurant’s website explains, respect for the environment is an important part of the its philosophy: “We have always recognized our responsibility in protecting the environment. Each year the average restaurant produces 75 tons of waste, uses 300,000 gallons of water, and is the #1 retail consumer of electricity. As one of only a few Three-Star 100% Land Fill Free, certified restaurants in Pennsylvania, we have implemented numerous measures. In addition to our 20+ years of full-scale recycling, we compost, source local and sustainable food and have implemented numerous equipment conversions. We hope our efforts in reducing our impact on the environment will inspire others.”
Not only is Tex-Mex Connection one of only a few of the listings from Pennsylvania; it also is one of the few Mexican-themed restaurants on the Green Restaurants Association’s list of certified restaurants nationwide. Others include Boxcar Cantina, a 2-star certified green restaurant in Greenwich, Connecticut and the 1-star certified Casa Nueva in Athens, Ohio and The Social Cantina in Bloomington, Indiana.
