Ensalada de Quinoa con Frutas Tropicales: Quinoa Tropical Fruit Salad
Makes 6 servings
1 c. quinoa
1 c. water
¾ c. pineapple juice
1½ c. chopped firm, ripe mango
1½ c. chopped firm, ripe red papaya (maradol papaya)
1½ c. sliced strawberries
2 T. fresh lime juice
3 T. of honey
Chopped fresh mint leaves for garnish
Rinse quinoa in a fine strainer. Bring water and juice to a boil, cover pan and lower hear. Cook until liquid has been absorbed. Transfer quinoa to a bowl fluff with fork, and cool to room temperature.
Add all chopped fresh fruit and stir gently to combine. In a small bowl, combine lime juice and honey. Pour mixture over quinoa salad and toss gently.
Refrigerate until cold. Serve topped with chopped mint leaves.
