For the Marinade:
9 to 16 shrimp, raw
½ C iTi Tropicals Passionfruit Juice
½ C Water
¼ C Olive Oil
¼ C White Vinegar
¼ C Granulated Sugar
1 ½ Tbsp Honey
1 Tbsp Onion Powder
1 tsp Garlic Powder
1 tsp Chili Pepper Flakes
½ tsp Chili Pepper Paste
Salt and Pepper to taste
Put shrimp into a glass bowl and top with all ingredients; mix thoroughly. Cover with plastic and allow to marinate in refrigerator for 45 minutes. Cook shrimp in frying pan over medium heat for five minutes.
For the salsa:
1 T. iTi Tropicals Passionfruit Juice
1 t. Extra virgin olive oil
1 Tomato, chopped
2 Avocados, diced
1/2 Red onion, diced
2 t. Lime juice
Mix thoroughly.
Place shrimp in corn or flour tortillas and top with salsa.
