- ¼ of a 3.5 oz Del Mayab Achiote 3.5 oz Brick
- 3-4 lemons, juiced
- 1 lb of Jumbo Shrimp
- Cooking Oil
- Salt & Pepper to taste
In a medium bowl, dissolve the Del Mayab Achiote in the lemon juice to create the marinade. Add salt and pepper to taste. Add the shrimp in the Achiote marinade and stir so all the shrimp is coated with the achiote. (Tip: You can either let the shrimp marinate from anywhere from 15 minutes to an hour or you may cook the shrimp immediately. The longer you marinate the shrimp the more it will soak up the flavor of the achiote.)
In a medium grill pan or sauce pan heat the cooking oil using medium heat and add the achiote marinated shrimp. Grill shrimp on each side for about 2-3 minutes.
Serving ideas: Add shrimp to skewers and serve as an appetizer. Add shrimp to tortillas and eat as a taco. Or make it a meal by adding rice & beans.
