From Beatrice Rivera Retired Chef/Owner, Beas Kitchen San Antonio
2 peaches, diced (firm)
5 strawberries, diced
1⁄2 cup pineapple, diced
3 T. canned diced tomato
2 t. red onion, diced
1 serrano pepper, seeded and diced 1 t. cilantro, finely chopped
Juice of 1⁄2 lime
Salt and pepper to taste
Combine all ingredients; chill and serve.
