3 ea. poblano peppers, roasted, peeled, seeded, and chopped
3 c. hearts of palm, cut into wheels and drained
1 ea. red onion, cut into rings, grilled
1 ea, avocado halves, sliced
1 c. cherry tomatoes, quartered
5 oz. Italian dressing
3 T. cotija cheese
Toss all ingredients with dressing and separate into two chilled salad bowls. Top with cotija cheese then serve.
