Makes 6 servings
1 can (15 oz.) black beans, rinsed and drained
¾ t. ground cumin
½ t. ground chipotle chili pepper
1½ lbs. ground beef (80% lean)
½ lb. uncooked chorizo sausage
Salt and pepper
6 o. Widmer’s One Year Cheddar cheese, cut into six slices (1 oz. each)
6 oz. V&V Supremo Queso Chihuahua® Quesadilla cheese, cut into six slices (1 oz. each)
1 c. refried beans, warmed
1 c. guacamole
6 whole wheat buns, split
1½ c. pico de gallo, drained
Grease grill grate. Heat grill to medium. Combine the black beans, cumin and chipotle chili pepper in a large bowl. Crumble beef and chorizo over mixture; mix just until combined. Form into six patties, about ⅓ pound each. Season with salt and pepper.
Grill burgers, covered, over medium heat for 5 to 8 minutes on each side or until a thermometer inserted into patties reads 160°F. Top with cheddar and queso quesadilla. Cover and cook for 1 to 3 minutes longer or until cheeses are melted.
Spread refried beans and guacamole on bun bottoms; top with burgers and pico de gallo. Replace bun tops and serve.
