
CUBANO SWEET POTATO TACOS
3 c. diced North Carolina sweet potatoes
1/4 c. margarine
2 lbs. ground beef
1 T. chile de arbol
1 c. diced onions
1-1/2 t. dried oregano
3/4 t. dry basil
2 c. diced tomatoes
1/4 c. cilantro
1 T. salt
Flour tortillas (6-inch)
White American cheese, shredded
Roasted tomatillo sauce
Blanch sweet potatoes until medium-soft; set aside. In a skillet over medium heat, melt margarine. Add ground beef; cook and stir 3 minutes. Stir in sweet potatoes and chile de arbol; cook 2 minutes. Add onions, pepper, basil and oregano; cook 3 minutes. Add tomatoes; cook 2 minutes. Stir in salt and cilantro; reduce flame and simmer 5 minutes. To serve, place 2 ounces of the sweet potato mixture into a tortilla. Garnish with cheese and tomatillo sauce. Repeat with remaining ingredients.
