Cola de Mono:
Chilean Christmas Drink
Makes 12 servings
6 c. whole milk
3 cinnamon sticks
6 whole cloves
1 c.sugar
3 T. instant coffee
1 t. vanilla extract
1 c. white rum, pisco or brandy
Bring the milk, cinnamon, cloves and sugar to a boil. Remove from heat and dissolve the coffee into the hot milk mixture. Strain the mixture into a pitcher, add vanilla extract and alcohol. Chill and serve cold in rocks glasses. Garnish with cinnamon sticks if desired.
