1 shot of Mexico Oaxaca or Chiapas Espresso
¾ oz. Joven Mezcal
1 oz. simple syrup (1:1)
¼ oz. fresh lime juice
5 drops saline solution (recipe below)
Combine all ingredients in a shaker tin, then fill with ice and hard shake for 10-15 seconds. Strain into a coupe or nick and nora glass. Serve with a lime wheel.
The Saline Solution:
3½ oz. filtered water
⅔ oz. Kosher salt
Dissolve the salt in the water and reserve in a dropper bottle.
