Guacamole is one of the most popular starters at Mexican restaurants. This Yucatán Guacamole is a regional rendition of a customer favorite — and since regional cuisine is trending, will make a great addition to fall menus.

1 ½ c. Avocados From Mexico™, diced
2 T. onion(s), red, diced
2 T. pepper(s), habanero, minced
1 T. salt
¼ c. vinegar, white
1 lime(s), juiced
¼ c. grapefruit, juiced
½ c. orange(s), juiced
In a small mixing bowl, combine red onion, habanero, salt, vinegar, and all three citrus juices. Add in diced avocados, then marinate overnight in the refrigerator. After marination, strain liquid, then mash avocados.
