12 yuca cups
4 T avocado pulp
2 T tomato, small dice
2 T lime juice
2 T jalapeno, minced
2 T red onion, minced
4 T cilantro, picked
12 oz Dr. Pepper Beef*
Prepare the salsa by mixing the tomatoes, lime juice, jalapenos, onions, and cilantro.
Roast the Dr. Pepper Beef at 350 degrees until it reaches an internal temperature of 125 degrees, medium rare. Let rest and slice thin.
Fry yuca cups in a 350 degree fryer until cups are lightly browned and crispy.
Fill bottom of cups with a thin layer of avocado pulp, then add 1 teaspoon prepared salsa. Top with slices of Dr. Pepper Beef.
