Shredded Beef Tostones Rellenos

Makes 12 stuffed plantain cups
12 BIG BANANA® plantain toston cups
2 med. onions, finely chopped
8 cloves garlic, finely chopped
1 red bell pepper, finely chopped
1 yellow bell pepper, finely chopped
½ green bell pepper, finely chopped
2 lbs. shredded beef
2 (14-oz.) cans tomato sauce
1 T. black pepper
1 T. paprika
½ T. cumin
2 T. dried oregano
Salt to taste
1 c. red wine
½ c. pitted olives
Fry plantain cups in a 350°F fryer for 3 minutes. Add the onion, garlic and bell peppers to the shredded beef, along with the tomato sauce, seasonings, wine, olives and mix until well combined. Cook over low heat for 45 to 55 minutes. Adjust the seasonings as necessary.
To serve, fill each plantain cup with beef mixture. Garnish with cheese and your choice of cilantro or parsley. Serve immediately.
