Mojito Almonds
Mojito almonds recipe

120g whole natural almonds
Fine shreds of lime zest and 2 T. lime juice*
2 T. white rum
2 T. caster sugar
Mint leaves and lime wedges, to serve
Put the almonds into a dry frying pan and heat for about 1 minute to toast them, shaking the pan occasionally. Add the lime zest, lime juice, rum and caster sugar. Stir well, then cook for a few moments until the liquid has evaporated and the almonds are coated.
Cool, then serve, garnished with mint leaves and lime wedges.
*You could substitute lemon zest and juice for the lime.
