Recipe courtesy of Performance Foodservice
7 lbs. chicken wings, fully cooked
Canola salad oil, for frying
Michelada mix
20 fl. oz. BBQ sauce, smokey
3 oz. chile paste
2½ t. ground cumin
2½ t. granulated garlic
2½ t. granulated onion
½ c. sugar, brown
Salt and pepper, to taste
3 T. lime zest
4 T. cilantro, chopped
In a deep mixing bowl, combine the Michelada Mix, BBQ sauce, brown sugar, guajillo paste, chopped cilantro, spices, and lime zest. Stir until all ingredients are well blended. Adjust seasoning to taste.
Toss the fully cooked chicken wings with half of the Michelada BBQ sauce, ensuring each piece is evenly coated. Cover and marinate for at least 2 hours or overnight for deeper flavor.
Before frying, remove any excess marinade. Fry the wings until golden brown and crispy. Drain well, then glaze with the remaining Michelada BBQ sauce before serving.
To serve: Plate 6 wings per serving, accompanied by 2½ oz. of Michelada BBQ sauce for dipping.
