Mezcal Chicken Wings

Makes 44 wingettes
3 lbs. chicken wings, tips removed, cut in half at the joint
½ c. fresh lime juice
¼ c. mezcal
1 ½ T. agave syrup or nectar
2 T. adobo sauce from chipotles in adobo
1 t. ground cumin
Salt and pepper to taste
Place the chicken in a non-reactive container or sturdy zip lock bag. In a bowl, mix the lime juice, mezcal, agave syrup, adobo sauce, cumin, salt and pepper. Pour this mixture over the chicken and marinate, refrigerated, for at least two hours.
Preheat oven to 375°F. Arrange the wings on racks set over baking sheets. Bake for one hour, turning once.
Place wings on platters, garnished with lime wedges.
