Maguey Sweet Sap
Maguey Sap Villa de Patos is an organic raw sweetener with a varied sugar profile obtained directly from the plant. To obtain it, the central part of the plant is removed before it starts to develop its flower. After a while, a craftsman scrapes this hollow made in the center of the maguey with a spoon-shaped instrument, and the sap that was to have nourished the flowering stalk slowly starts to flow. It is then collected several times a day, for up to four months. This craft is known as tlachique, and it represents an ancient Mexican tradition.
Maguey Sap comes from magueys that grow in the desert without the use of pesticides or synthetic fertilizers. This is a project that supports the economy of several families in small rural villages in North Mexico. Certified organic.
