KTM Restaurant Group, which operates Tacos Tequila Whiskey and Fish N Beer in Denver, has opened a two-week pop-up restaurant called Burro Rito. Here are the details from KTM:
Unprecedented times call for something new...and these pinche times are unprecedented. So, since Fish N Beer is currently dry docked, we are temporarily replacing our fresh oysters with a fresh idea: Burro Rito. Burro Rito is a two-week restaurant pop-up, Wednesdays through Sundays from May 7th-21st, serving fat burritos with wood-grilled ingredients from the Fish N Beer location at 3510 Larimer Street, Denver 80205. It’s KTM Restaurant Group’s local response to a global pandemic that weighs heavy on our collective conscious. And what better way to lighten things up than to fire up a fat one delicious enough to take your mind off the world. This goes double for our front-line healthcare workers so, for every burrito sold from May 7-21th we’ll donate a burrito to a health care worker.
Burro Rito takes the same approach to the humble burrito as our sister restaurant, Tacos Tequila Whiskey, takes with the taco: marrying traditional Mexican ingredients and cooking techniques with a gringo chef’s spin and wrapping it all together in a tortilla. This isn’t just any tortilla, though. This is a ginormous red chile flour tortilla custom made with Colorado-grown transitional wheat flour by our good friends at Raquelitas—just up the street on Larimer. You can’t get more local than 5 blocks away!
We’re taking these bad boys to the next level by using Fish N Beer’s signature wood-grill to add depth and flavor to meats, seafood, and vegetables right in front of our socially distanced guests (to-go, of course). That’s something you won’t find at your average mission-style burrito spot.
The Fish N Beer staff will be serving up the following dishes:
Burro Ritos: (Wednesday-Sunday 11:30 AM to 7:30 PM)
Pinche Pollo-Rito: 12-hour brined chicken marinated in a blend of achiote, guajillo chili, and spices, grilled and served with our pork chicharron pinto beans, lime & herb rice, Pico de Gallo, and Monterrey Jack cheese. (This house specialty is the first burrito we ever made and a staff favorite)
Steak-Rito: marinated sirloin, lime & herb rice, frijoles negro con carne, Monterrey Jack cheese, chimichurri sauce.
Tinga-Rito: wood-grilled cauliflower, lime & herb rice, vegetarian black beans, chipotle-tomato sauce.
Atun-Rito: guajillo crusted seared ahi tuna, ponzu sauce, lime & herb rice, vegetarian black beans, chipotle mayo, tobiko.
SoCal-Rito: marinated sirloin, house fries, Monterrey Jack cheese, guacamole, sour cream, Pico de Gallo BYOB-Rito: Build Your Own Burro Rito
