10 lbs. chicken thighs, diced
2 large onion(s), medium diced
2 ea. pepper(s), red bell, medium dice
1 #10 can hominy, white
8 ea. Custom Culinary® True Foundations® Latin-Style Citrus Chili Sauce, 2# bags
Cabbage, as needed, shredded for garnish
Radish(es), as needed, sliced for garnish
Cilantro, fresh, as needed, chopped for garnish
Scallions, as needed, chopped for garnish
Sauté diced chicken thighs until lightly browned; remove from pan.
Sauté onion and bell pepper in same pan until translucent. Add browned chicken thighs back into pan and mix with onion and pepper. Add hominy and stir together.
Add Custom Culinary® True Foundations® Latin-Style Citrus Chili Sauce. Bring to a boil while stirring. Reduce to a simmer and cook for 30 to 40 minutes.
Serve in a shallow bowl and garnish with cabbage, radish, cilantro and scallions.
