Makes 8 to 10 medium tostadas
1 whole chicken breast, 10-11 oz., cooked and shredded
1⁄2 c. marinated artichoke hearts, quartered
1⁄4 c. marinade from the artichokes
1⁄2 c. grape or cherry tomatoes, halved
1⁄2 c. finely chopped red onion
8-10 medium tostadas, homemade or packaged
1⁄2 c. cooked, mashed white beans, such as alubia chica
Shredded lettuce, for garnish
Crumbled queso fresco, for garnish
In a bowl, mix the first five ingredients. Spread the tostadas with the mashed beans. Top the beans with the chicken and artichoke mixture, and garnish with shredded lettuce and crumbled cheese.
