Makes 60 servings
150 gram White Sesame Seeds
300 gram Pecan
150 gram Hazelnut
30 gram Chile de Arbol
40 gram Chile Puja
120 gram Chile Pasilla
60 gram Chile Morita
120 gram Chile Ancho
120 gram Chile Guajillo
120 gram Chile Cascabel
210 gram Garlic
1 gallon Canola Oil
600 gram Apple Cider Vinegar
Instructions
STEP 1: Toast sesame, pecan, hazelnut separately until dark golden brown in 325 degree F oven; allow to cool then place in food processor and coarse pulse; sift nuts to remove dust.
STEP 2: Deseed chiles and toast separately; blend all chiles together.
STEP 3: Food process garlic. Place in hot rondeau with oil, turn to medium high. When garlic begins to obtain color, turn off heat and cool down garlic and oil.
STEP 4: Add garlic and oil to ground chiles.
STEP 5: Fold in nuts; add vinegar; check seasoning; cool before serving.
