Al Pastor Crunch Dog

Makes 1
1 slice bacon, hickory smoked
1 6 in. hot dog, Vienna Beef style
1 ea. hot dog buns
2 t. mayonnaise
¼ c. pico de gallo, prepared
1 T. al pastor sauce*
2 sprigs ea. cilantro, fresh, whole
Wrap uncooked bacon around hot dog, securing bacon in place with toothpicks.Place wrapped hot dog into fryer basket; fry until bacon is crispy and hot dog has reached an internal temperature of 150°F. While the hot dog is cooking, toast bun on a flat-top grill or in the oven for 1 to 2 minutes.
To assemble: Spread mayonnaise inside of toasted bun. Nestle bacon-wrapped hot dog inside. Top with pico de gallo and a drizzle of al pastor sauce. Finish with cilantro.
