Glass of beet juice with vegetables on table close up

Makes 8 servings
2 qts. water
½ c. sugar
1 lb. beets
In a large pitcher, combine 2 quarts water with the sugar, stirring until dissolved. Set aside. Cook beets in more water to cover. Peel and chop beets, reserving cooking water. Place cooked beets and cooking water in blender and puree. Strain the beet mixture to remove any solids. Add to the sweetened water, stirring to combine. Serve cold.
